About Chinthapandu Pulihora:
One of the most common breakfast items of Andhra people is Andhra Chinthapandu Pulihora. Chinthapandu Pulihora is one of the tastiest food items served in all kinds of functions like marriages, get-togethers, birthday parties, festival times, in all big and small parties. The taste of this food item was also mentioned in the cinema songs by poets and these old songs are so popular even today. In that, there are many types Pulihora like Chinthapandu Pulihora, lemon rice Pulihora, Avakaya Pulihora l and Usirikaya Pulihoraetc.
How to prepare Chinthapandu Pulihora
Wash the good quality old rice two or three times. Add sufficient water (2 inches above rice) and cook it in a Pressure cooker or Electric rice cooker.
2. Now take a frying pan and keep the condiments (split black gram, split Bengal gram, mustard seeds, dry red chilies) in the pan. Add little oil to the condiments into the pan and fry it to the golden brown color of split Bengal gram and split black gram. At last add split green chilies, curry leaves, and grated ginger while frying in the pan. Then immediately add tamarind juice into the pan containing the fried condiments and boil them together for about 10 minutes on medium flame. Before removing from the stove add half spoon of turmeric powder and sufficient salt into the content of the pan, mix it.
3. Now take out the cooked rice from the utensil into steel basin and spread it with steel spoon. Now the fried and boiled tamarind content of the frying pan has to be transferred on to the rice in the steel basin. Add little oil and mix the cooked rice and fried as well as boiled content thoroughly. Now the hot tamarind Pulihora is ready for serving.
5. To taste more one can do one of the following also in the preparation of Andhra Pulihora. Take some Sesame or Gingelly seeds and fry them in a frying pan till they turn to golden brown color. Then these roasted seeds are made into powder by using the grinder. This powder can be mixed with the Pulihora before serving. It makes the Pulihora tastier.
If you don’t use Sesame seeds powder, use ground nuts. Fry them in oil for sufficient time and add them to Pulihora before serving. Fried Cashew nuts also can be used to taste Pulihora.
